At the end of this one-day training, participants will be familiar with the key GHP elements and the 7 principles of HACCP and its implementation.


Key Learning Objectives:

  1. State the key Good Hygiene Practice elements.
  2. State the 7 principles of HACCP based system.
  3. Differentiate the types of food hazards including allergens.
  4. Explain how to conduct a hazard analysis for each step.
  5. Explain the risks matrix and control measures.
  6. Explain how to determine a CCP in the process steps.
  7. Explain how to set Critical Limits based on reference
  8. Explain how to set up a monitoring system for each CCP.
  9. Explain appropriate Corrective actions for each CCP.
  10. Differentiate between Verification and Validation.
  11. Explain how to control documents and records.
  12. Review a sample of a HACCP Plan Summary.  


This is a 1 day training program and costing is based on per pax costing with a minimum of 10 participants and maximum 20 participants.
