At the end of this one-day training, participants will be familiar with the key GHP elements and the 7 principles of HACCP and its implementation.
Key Learning Objectives:
- State the key Good Hygiene Practice elements.
- State the 7 principles of HACCP based system.
- Differentiate the types of food hazards including allergens.
- Explain how to conduct a hazard analysis for each step.
- Explain the risks matrix and control measures.
- Explain how to determine a CCP in the process steps.
- Explain how to set Critical Limits based on reference
- Explain how to set up a monitoring system for each CCP.
- Explain appropriate Corrective actions for each CCP.
- Differentiate between Verification and Validation.
- Explain how to control documents and records.
- Review a sample of a HACCP Plan Summary.
This is a 1 day training program and costing is based on per pax costing with a minimum of 10 participants and maximum 20 participants.
