At the end of this one-day training, participants will be familiar with the key components of allergen management as part of hazard control and prevention.
Allergen management must always begin by recognizing which raw materials contain the common big 8 allergens. This is followed by establishing a management program to prevent any allergen cross contact to other foods throughout the food handling process till final service to clients.
Key learning objectives:
1. Understand allergens are part of chemical hazards.
2. Identify the common food allergens.
3. Understand food allergies and its symptoms.
4. Understand allergen declaration from suppliers
5. Understand the different components of allergen management.
6. Understand the difference of allergen detection and validation.
7. Identify allergen labelling requirements.
8. State a few examples of allergen related recalls.
This is a 1 day training program and costing is based on per pax costing with a minimum of 10 participants and maximum 20 participants.
